vegetable oil

onions
sliced
2
garlic cloves
finely

fresh
ginger,
finely
chopped

chilli
de-seeded
 
and
chopped
1 tablespoon
Thai
red
curry
paste
 
225g
potatoes
cubed,
boiled
for
5 minutes
 
and
drained

red
peppers
de-seeded
 
and
diced
 
300ml
vegetable
stock
1 teaspoon
salt
4
tablespoons
chopped
fresh
coriander
 
Method
Heat
 
the
oil
in
 
a
wok
or
large
frying pan.
Stir
fry
 
the
onions,
garlic,
ginger
 
and
chilli
 
for
2

minutes.
Add
 
the
curry
paste
 
and
stir fry
 
over
 
a
low
heat
for
2
 
3
minutes.
Add
 
the
potatoes,
peppers,
stock
 
and
salt
 
and
cook
for

minutes
 
or
until
all
 
the
vegetables
are
tender.
Stir
in
 
the
coriander
 
and
serve
immediately.
